At what temperature should wine be served?
A red that is too warm tastes of alcohol; a white that is too cold tastes of nothing. A few degrees matter more than the price.
Red is not room temperature
The rule “serve red at room temperature” comes from a time when rooms were cooler. Most reds are at their best at 16-18 °C.
If the bottle has been standing in a warm room, give it half an hour in the fridge before serving.
White and sparkling
White wine is best at 8-12 °C and sparkling a little cooler. Too cold and the aromas disappear entirely.
